Storing and Reheating Leftovers
Cool leftovers to room temperature, then cover and refrigerate for up to 4 days. Reheat individual portions in the microwave, or warm a larger amount in a covered baking dish at 350°F until heated through. The baked casserole can also be frozen for up to 2 months; thaw it overnight in the refrigerator before reheating, and note that the potatoes may soften slightly more than they were on the first day.
Serving Ideas
Because the casserole is rich and filling on its own, simple sides work best: a green salad with a light vinaigrette, steamed green beans, or roasted broccoli all balance the dish without competing with it. A slice of crusty bread on the side is useful for scooping up the last of the sauce.
